This is a proper lazy day dish that packs a much bigger punch than the effort it takes to make. Making risotto can feel like being chained to the hob but this one is so easy to make that you can keep the kids entertained whilst it gently cooks into a delicious one pot meal for all the family.

Equipment needed
1x non stick saucepan
Ingredients (2 adults & 2 toddlers)
1 knob of butter & splash of olive oil
1 chopped red onion
1 chopped red pepper
100g diced chorizo
150g risotto rice
2 crushed garlic cloves
1 teaspoon smoked paprika
1 glass of white wine (optional)
500ml chicken stock
100g cooked sweetcorn (or tinned)
1/2 lemon
1 teaspoon soft cheese
Method
1. Melt the butter and olive oil in the pan.
2. Add in the chopped pepper, red onion and chorizo and cook for 10mins until the chorizo juices are running and the veggies are soft.
3. Add the risotto rice and coat in all the juices. Cook for a minute.
4. Add the garlic and paprika. Mix it all up and cook for another minute.
5. Add all the chicken stock. Bring to the boil before turning down the heat to a gentle simmer. Cover and cook for 15 minutes.
6. Stir and cook for another 10minutes.
7. Check the texture of the rice. Add the sweetcorn, lemon juice and soft cheese and warm through.
8. Serve!
