Sausage, Courgette and Pepper Spaghetti - An Easy Family Dinner

One of our favourite type of cooking is to have a rough idea of what we're going to cook and then constantly add to it based on what's in the cupboard and fridge. This is exactly one of those recipes where we had a rough idea of doing sausage spaghetti but we had some fresh courgette, leftover tomatoes and peppers and so decided to mix it all together for an easy weekday family meal. 

Cooking Time

Prep: 10 mins 

Cook: 20 mins

Equipment needed

1x  saucepan

1x deep frying pan

Ingredients (2 adults & 2 kids)

Drizzle of Olive Oil

1x red pepper roughly chopped

1x yellow pepper roughly chopped

1x tomato roughly chopped

1x courgette roughly chopped

3x garlic cloves crushed

1x teaspoon of fennel seeds (optional)

8x chipolatas (chopped into 1 inch pieces)

250g spaghetti

Tenderstem broccoli (optional)

Method

1. Heat the olive oil in the frying pan and add the chopped chipolatas and cook for 10 minutes until browned. Remove from the frying pan. 

2. Add the peppers, tomato, courgette, garlic and fennel seeds to the frying pan and cook until soft for 10 mins. 

3. Meanwhile cook the spaghetti in a pan of boiling water as per pack instructions. 

4. Add the broccoli to the spaghetti for the final 5 minutes.

5. Add the sausages back to the frying pan.

5. Once everything is cooked add the spaghetti to the frying pan give it a good mix and serve!
