Sausages are an absolute staple in our household - so they are a great starting point for any recipe! There is no easier way to cook them than in a tray bake. Mix all the ingredients together, put into the oven, manage some toddler chaos whilst it cooks and serve. It's so easy, nourishing and flavourful so really is a super supper!

Sufficient to feed a family of 2 adults and 2 toddlers with some left to spare for the freezer.
Equipment
1 deep filled roasting tin
Ingredients
8x chipolatas (or more if the kids are feeling hungry!)
200g new potatoes (chop large ones into half)
400g tin of butter beans rinsed (cannellini beans are great if butter beans are a bit too large)
1x red pepper chopped into slices
1x onion chopped into slices
150g cherry tomatoes
3x garlic gloves finely chopped
3x tablespoons extra virgin olive oil
50ml white wine
200ml chicken stock
Chopped parsley to garnish
Method
- Turn the oven onto 180C.
- Tip all the ingredients into the baking tray except for the wine and stock. Give them a big mix up to cover in the oil.
- Roast for 10 mins, give all ingredients a mix up and then add the white wine and stock.
- Roast for a further 20 minutes until the sausages are cooked through and the potatoes are tender.
- Scatter over the parsley and serve!
