Fiesta time! These fajitas are one of our favourite for Sunday evenings after a busy weekend. We put just enough spices in to gently warm our boys' taste buds without blowing their heads off. We love serving this in a big bowl on the table and let the kids help themselves before diving in. We hope your toddlers love it as much as ours do.

Sufficient to feed a family of 2 adults and 2 toddlers with some left to spare for the freezer.
Equipment
1 casserole dish
Ingredients
1x Red Onion finely chopped
1x Red Pepper roughly chopped
3x garlic cloves finely chopped
2x chicken breasts chopped into chunks
1x tablespoon fajita mix (we use the pre-mixed blend from supermarkets, adjust quantity to your preferences)
1x 400g tin of black beans drained and rinsed
1x 400g tin chopped tomatoes
Salad mix of your choice
Tortilla wraps (the Crosta Mollica flatbreads are a household favourite for us!)
Method
- Sweat the onions and pepper on a medium heat in the casserole dish until soft.
- Add the garlic and cook for a further minute.
- Add the chicken breasts and stir through the veg mix to fully coat.
- Add the fajita mix and stir it through all ingredients.
- Add the black beans and chopped tomatoes. Give it a good stir.
- Cover and let cook for 20 minutes until all veg is soft and the chicken is cooked through.
- Serve!
