This one-pan chicken couscous is a simple, nourishing meal that’s perfect for busy family evenings. Made with soft vegetables, tender chicken thighs and gentle flavours, it’s ideal for little ones while still being satisfying for adults. Everything cooks together in one pan, making it both fuss-free and packed with comforting flavour.

Equipment needed
1x non stick saucepan
Ingredients (2 adults & 2 toddlers)
5–6 boneless, skinless chicken thighs
1 tbsp olive oil
1 small red onion, finely diced
1 leek, finely sliced (white/light green part only)
2 garlic cloves, crushed
1 tsp fresh ginger, finely grated
200g giant couscous
500ml low-salt chicken stock
Half a lemon
Handful of chopped parsley
Method
1. Melt the olive oil in the pan.
2. Add the chicken thighs and cook for 3-4 mins on each side until gently golden. Remove from the pan and set aside.
3. Add the leeks and red onion to the pan and cook on a gentle heat for 5 mins until softened.
4. Add the garlic and ginger and cook for a minute to bring out the flavours.
5. Add the cous and cous and mix through the veg.
6. Add the chicken thighs and juices into the pan. Pour in all the chicken stock.
7. Bring to a simmer and cover. Cook for 20mins and it's all done! Take off the heat add the lemon juice and a scatter of parsley.
8. Serve!
