OK, we know that spaghetti carbonara isn't the healthiest dinner for the kids but let's be honest, sometimes you just want your little ones to clean their plates and stay full until breakfast! Our lighter toddler carbonara skips the heavy cream, uses just one egg and a spoonful of Greek yogurt, and comes together in under 25 minutes. The perfect easy family pasta dinner for busy weeknights.

Equipment needed
1x large frying pan
1x saucepan
Ingredients (2 adults & 2 toddlers)
200g spaghetti
Olive oil
100g lardons
3x garlic cloves crushed
1 egg
1 tablespoon Greek yogurt
Basil & cheese to finish
Method
1. Cook the spaghetti in a pan of boiling salted water for 10 minutes, or until al dente. Reserve a cup of pasta water before draining.
2. Meanwhile, heat a drizzle of olive oil in a large frying pan over medium heat. Add the lardons and cook until crispy.
3. Add the crushed garlic and cook for 1 minute until fragrant.
4. Add the drained spaghetti to the frying pan along with a splash of the reserved pasta water and toss to combine.
5. Remove the pan from the heat. In a small bowl, whisk together the egg and Greek yogurt, then stir through the pasta until creamy and well coated.
6. Finish with grated cheese and fresh basil.
7. Serve immediately and enjoy!
