We've tried many curries for our boys over the years for easy dinners with mixed success. Trying to find the balance between warmth, flavour and texture can be really tricky but this one was an absolute winner. You can adjust the ingredients based on your kids' preference for a flavour punch and it really is super easy to make.
We served the curry with some diced cucumber and tomato for added texture and freshness.

Cook: 45 mins
Equipment needed
1x non stick pan (you can also do this in slow cooker if you have one!)
Ingredients (2 adults & 2 toddlers and a portion to spare in the freezer)
1x Olive oil
1x White onion diced
2x tbsp Ginger grated
4x garlic Cloves crushed
1x tbsp Garam masala
1x tbsp Paprika
1x tsp Turmeric
2x tbsp Tomato puree
640g Chicken thighs
500g Passata
Cooked Rice
Method
- Add the oil to the pan and cook the onions until soft and translucent.
- Add the ginger, garlic and spices and cook for a further minute.
- Mix in the tomato puree and cook for a minute.
- Add the chicken thighs and give them a really good stir to coat them in the flavour mixture.
- Add the passata, bring to the boil, cover and turn down the heat to a simmer.
- Cook for 30 minutes on a gentle heat until the chicken is tender and easily breaks up
- Serve with cooked rice and any other curry accompaniments you enjoy!
