OK folks this is an absolute winner! It's possibly our favourite meal to cook for our kids now. So simple, delicious and healthy - it is a real toddler tantalisingly tasty top dinner! You can dial up to match your toddler's tastebuds but we know they'll love it as it is!
It is so easy to prepare that it's perfect for busy weekday evenings and the whole family will love it!
Cooking Time
Prep: 10 mins
Cook: 40 mins
Equipment needed
1x large ovenproof tray or roasting dish
Ingredients (2 adults & 2 toddlers)
3 tablespoons tomato puree
2 teaspoons dried thyme
3 garlic cloves crushed
3 tablespoons olive oil
4 boneless chicken thighs
300g new potatoes halved
100g diced smoked bacon
400g cherry tomatoes halved
Method
1. Pre-heat oven to 180C fan.
2. Mix in a small bowl the tomato puree, thyme, garlic and olive oil to combine.
3. Put the potatoes, chicken and tomato puree mix into the roasting tin and mix everything up to give the potatoes and chicken a full coating.
4. Roast in the oven for 20 minutes.
5. Add the tomatoes and bacon into the roasting dish.
6. Roast for another 20 minutes until the chicken and potatoes are cooked and the tomatoes ooze their juices into the pan.
7. Serve with veg!
