Some of my favourite moments cooking for the family is when I have nothing planned and freestyle based on what's in the fridge and cupboard. This is one of those recipes that I cooked one weekday which was a huge success and super easy to make that I have to tell you about it!
Cooking Time
Prep: 10 mins
Cook: 30 mins
Equipment needed
1x shallow casserole dish
Ingredients (2 adults & 2 toddlers)
Olive oil
1x onion finely chopped
1x large sweet potato peeled and cubed
3x garlic cloves crushed
1x teaspoon of thyme (dried or fresh will do!)
200g long grain rice
500ml chicken stock (we use low salt stock cubes but bone broth also works great!)
200g Cod fillet
Grated parmesan
Method
1. Heat the olive oil in the dish and add the chopped onion. Cook until the onion is translucent and soft (approx 10 minutes).
2. Add the sweet potato, garlic, thyme and rice and cook for a minute to release flavours.
3. Add the chicken stock, bring to a boil, turn down the heat and gently simmer with the lid on.
4. After 10 minutes give the rice a stir and add a little more stock if it's looking dry. Add in the cod and cover the pan.
5. After a further 10 minutes, give everything a good stir to break up the cod and check the rice and sweet potato is properly cooked.
6. Finish with grated parmesan and serve!
